As you enter Waeska bar your eye is immediately drawn to the collection of treasured artifacts, objets d'art and priceless artworks, housed behind the expansive labradorite bar.
However, your attention is soon taken by the list of ethnobotanical cocktails, created by the expert team of in-house mixologists.
The cocktail menu is founded on ethnobotany – the study of a region’s plants and their practical uses through the traditional knowledge of a local culture and people.
Through experimentation and personal research of ancient herbs and botanicals, Waeska offers an evolving menu of cocktails that surprise and tempt.
In the summer months, the retractable doors from the bar open onto a private courtyard with enormous 152 year old potted Tasmanian Ferns.

Waeska Bar is a 'walk in' venue only and you cannot reserve tables online
Please note that our Waeska bar operates a strict dress code of smart/ casual, no ties no trainers, no hoodies after 6pm. - In-house guests may have two additional guests (per room booked) in Waeska Bar on Friday and Saturday nights, any more guest should be requested with reception.
